(This recipe makes about 8 pints, or 4 quarts)
Ingredients:
8 Cups Tomatoes, skins slipped (peeled), chopped & drained
2 1/2 Cups Onions, Chopped
1 1/2 Cups Green Peppers, Chopped
*1 Cup Jalapeno Peppers, Chopped (Optional ~ I don't like hot salsa!)
6 Garlic Cloves, Minced
2 tsp. Cumin
2 teaspoons Pepper
2 Tbps. Dry Chives
1 tsp. Dried Parsley
1/8 C. Canning Salt
1/3 C. Sugar
1/3 C. Vinegar
1 (15 ounce) Can Tomato Sauce
1 (12 ounce) Can Tomato Paste
Directions:
~ Mix all together in a big pot and bring to a boil - boil for about 10 min.
~ Put in hot jars and seal properly
~ Boil in hot water bath for 15 minutes for Pints - 30 minutes for Quarts
(This is my 5800' altitude chart time - check for your proper time for your altitude~!)
This is a "medium, chunky salsa". If you want a smoother, more liquid salsa, use a food processor on your veggies...
Over the years, I have tried over 15, bottled salsa recipes and this one is a keeper. I have been doing my salsa this way for the last 3 years. It's time consuming preparing the veggies, not even going to lie. But, it's so, so... WORTH IT~!

Hi Jen, I just made a batch of salsa last week. Hubby and I tried a bottle on Sunday and it was mighty tasty. Your recipe sounds yummy also. I will give it a try. Hoping to get enough tomatoes to make another batch. Thanks for sharing with SYC.

I love salsa and I have many, many recipe's. This one is bar far, MY FAVORITE yet... Hope you get the tomatoes you need to do a batch. Mine are all just starting to come on, all at the same time~ yikes... I'll be doing dozens of jars of chili sauce next.
